Hunting for blackberries!
This sunday we have been hunting for berries. The idea to make juice from wild berries came yesterday as we found some nice bottles at a fleamarket. Go to the page Byhøst and you can find a map that shows where to find your wild foods in the city. We were lucky - we found the perfect spot, away from the traffic and with lots of blackberries. And the homemade juice tastes fantastic!
I made the juice from this easy recipe:
1 kilo of fresh wild blackberries
350 grams of brown sugar
2 dl water
You start by cleaning the berries thoroughly. Then you cook the berries with the water at low heat until the berries 'pop'. Afterwards put the mashed berries into a sieve with a cloth in it, and collect the juice in a bowl underneath. Heat up the juice with the sugar and fill the juice on to bottles (that have just been boiled). I prefer not to use any kind of preservative (the sugar preserves a little), but to make the amount we can drink or freeze the rest for some other time.
I think you normally compost or just trough out the pulp, but i added some vanilla and a little sugar and put it in a jam jar. If i am lucky it will taste good as jam in the morning!
